Lemon Strawberry Glazed Heart Scones

It was finally sunny this weekend and I got to do some baking. I’ve had this heart scone idea floating around my head for a few weeks now. I wanted a vibrant glaze befitting the looooove holiday and the delicious flake of my go-to favorite scone recipe. And after making them and watching my littles devour them, I’m convinced this sweet Lemon Strawberry Glazed Heart Scone recipe is the perfect way to celebrate the loves in your life. They’re still a treat with lots of butter but I switched out the brown sugar in my maple scone with date sugar. The pretty, vibrant glaze is dye-free courtesy of crushed freeze dried strawberries. It’s such a pretty hue you’d never know and has the perfect strawberry flavor. Combine with lemon juice it’s a tart sweet glaze you’ll want to be generous with.

INGREDIENTS

2 C All Purpose Flour + 1 C Whole Wheat Flour

4 Tbsp Date Sugar

1/2 tsp Baking Soda

1 1/2 tsp Baking Powder

1/2 tsp Salt

1/2 tsp Ground Ginger

Zest of one Lemon + Juice

1 1/2 Sticks Salted Butter

3/4-1 C Oat Milk (you can sub any milk here, start with 3/4 C and add a little more if it’s still a bit dry)

 

Glaze

2/3 C Powdered Sugar

1/3 C Ground Freeze Dried Strawberries

Fresh Lemon Juice

INSTRUCTIONS

Start by Preheating your oven to 350 degrees F. I use a Silpat-lined or unbleached parchment paper on a Stainless Steel cookie sheet.

Mix your dry ingredients in a large bowl. Cut up your butter into pieces and mix into the flour mixture with a pastry cutter until you have pea-sized bits of butter throughout.

Once your butter is cut in, cut your zested lemon in half and squeeze the juice into your milk. Add liquid to the dry ingredients stirring just until dough forms. I had to add a few more splashes of milk. It really depends on the humidity in the air. Turn it onto the counter and pat it together. Here’s the part you don’t want to miss. Pat it into about 1 ” thick rectangle. Fold one side in half onto the other. Pat it flat again and repeat. Do this 4 times. This creates the flakey layers.

Finally, pat your dough about 1 1/2″ thick and use a heart shape cookie cutter. Add to your baking sheet and pop in the oven.

While they’re baking for 18-20 minutes, grind your freeze-dried strawberries into dust. You can do this the quick way by using a food processor. I didn’t want more dishes to do so I popped them in a bowl and squished them with the back of a spoon.

Once you have a nice dust, add the powder sugar and use the juice of another lemon to make the glaze. You’re aiming for the consistency of maple syrup. Not too runny but not too thick either.

Be generous with the glaze and finish with a sprinkle of some additional freeze-dried strawberry dust over the top. Enjoy this sweet Valentine’s treat! Lemon Strawberry Glazed scones are the perfect way to celebrate those you love. I think the only thing I’ll try differently next time is a slightly smaller heart cookie cutter so it’s less scone to more glaze.
