Wintertime is just synonymous with a good bowl of soup. We’re big soup eaters around here and anything that the kids can suck up with a cool twirly straw is a dinnertime win. So today I’m sharing my momma’s potato soup recipe. This one is dear to me. It feels like a hug and I wish I could get one of those from her right about now.
6-10 Medium Organic Gold Potatoes, peeled and chopped
1 Small yellow onion, finely chopped
3 Carrots peeled and diced
2 Stalks celery diced
2 Tbsp salted butter
1 qt Vegetable broth or chicken bone broth
1 C Water
2 tsp Flaked salt
Dash of pepper
Fresh rosemary finely chopped
Fresh Thyme finely chopped
Sage finely chopped
1 C Full fat Oatley (unsweetened oat milk)
Peel your potatoes and chop into small pieces, set aside. Dice onion, carrot, and celery. Add butter to large saucepan and add diced vegetables. Saute until onions are translucent and carrots are softened, 5 minutes.
Add fresh herbs, salt and pepper and stir. Add potatoes and pour stock and 1 cup of water to sauce pan. Bring to a boil and then reduce to a low simmer. Simmering your potatoes rather than rapidly boiling them keeps them from getting gummy.
Simmer for 45 minutes until potatoes are falling apart soft. I use an immersion blender but you could also add soup to a blender or mash down the potatoes by hand. The soup will be very thick at this point.
My mom always used canned milk to thin it out but we avoid dairy milk and tend towards non-dairy products. My absolute favorite non-dairy milk is an oat milk called Oatley. I get mine at Target or WholeFoods. You can order it online but it’s now available in a lot of stores. If you’re having a hard time tracking it down, ask your local store! It’s SO good and not only makes a delicious latte, see this recipe here, but mixes perfectly into many dishes from mac ‘n cheese to muffins. My mom never added cheese to this but I’ve had lots of friends who have taken this recipe and kinda flown with it. I like that it doesn’t leave you feeling heavy and uncomfortable.
