Have you jumped on the smoothie train? We’ve been making fruit / vegetable smoothies for years because it’s an easy way to pack the nutrition into something the kids devour. But this version was completely new to me until we stayed at Hermitage Bay in Antigua. The chef created this “protein smoothie” and we ordered it every. single. day. It was so refreshing and made me feel so good that I came home and tried my best to recreate this Nutmeg-Spiced Green Smoothie sans the tropical location of course, which is probably the secret ingredient.
I’ve never been one for meal replacement anything but this smoothie is so nutrient dense it’s often my breakfast or lunch. And it always makes more than I’m expecting, so I save my leftovers in the refrigerator, adding more Ripple milk to thin it out the next day.
Large Cup of Ice (I fill my drinking glass with ice)
1/4 C Hemp Seed
1/2 C Raw Almonds
1/4 C Pistachios
1 Tbsp Ground Flax Seed
Large Banana
1/4 tsp Ground Nutmeg
1/4 C Canned Coconut Milk (mine is usually separated so I use several scoops of the fat and pour in some of liquid)
1 C Fresh spinach (fully packed, less if using frozen spinach)
1 1/2 – 2 C Vanilla Ripple Milk (You can replace this with other non-dairy milk options. We love Ripple Milk for the protein content and always choose the unsweetened version of regular or vanilla)
1 Tbsp Raw Local Honey
Add the almonds, pistachios, ice, hemp seed, spinach, coconut milk and Ripple milk and blend until fully incorporated–a minute or so on high.
Add the banana, nutmeg, flax seed and honey. Mix on high for at least 30 seconds to fully blend ingredients together. Getting pieces stuck in a straw is the worst! Flax seed acts as a thickener so you will want to add more milk if it is too thick and why I add it at the end.
This frothy delicious smoothie is perfect for a hot summer day and easy to prep the night before if you’re running out the door in the morning.
Side Note: If you’re looking for an amazing blender, I’ve had my Vitamix for 6+ years and can’t say enough about it. It purees everything so well. And given how much use it sees, still works great.
