We’re on a popsicle kick. And I’m not complaining about it. Kai’s favorite summer food is watermelon. Who am I kidding, his favorite every season food is watermelon. Needless to say we’re trying to grow some in our garden and hoping they work after last year’s disappointment. We got one tiny little guy growing and then it withered. I’ve got some higher hopes for this year’s watermelon crop.
Three simple ingredients, a blender and popsicle mold is all it takes. I got this silicone one off Amazon last year when we were in a popsicle kick and it’s a good one. Because it is silicone you can squeeze the popsicles out really easily. No more soaking in hot water or banging them against the counter trying to get them out.
1/2 of a small watermelon chopped into large chunks
Juice and zest of one organic lime
1-2 Tbsp Agave
In a blender, add chunks of watermelon, lime zest and juice and 1 Tbsp agave. Blend until pureed into a juice. Taste with your finger to see if it needs more agave to sweeten.
Pour juice into popsicle mold 3/4 full. Place the on lid and slide in the wood sticks through the slots. Place in the freezer until fully frozen.
We leave ours in overnight and eat them the next day. Come rain or shine.
